Airbending is an art of evasion and pacifism. Also, it wouldn't be a stretch of imagination to think that maybe not all Air *Nomads* were in the temples during the attacks. If you think about it, it would only make sense for there to be survivors. And while the Fire Nation might have been able to hunt down most, the one that remained adapted to the war.
